CHILI HONEY LEMON ROASTED CAULIFLOWER
Preheat oven to 450 degrees. Slice cauliflower into florets and toss with extra virgin olive oil and salt and pepper. Place on a parchment lined baking sheet and toast for 15-20 minutes. As that is roasting, make your sauce. Mix 1/3 cup chili garlic sauce, juice of 1/2 of a lemon, 1/2 tsp smoked paprika, 2 TBSP honey, 1/2 tsp turmeric, 1/2 tsp garlic powder, 1/2 tsp garlic powder, 2 TBSP olive oil, 1 tsp Badia Mojo seasoning (or Tajin) and chili flakes and salt to taste. Coarsely chop 1/2 a cup of dry roasted peanuts and 2 TBSP cilantro. Remove cauliflower when it's lightly browned and toss in sauce. Top with peanuts and cilantro and serve.
